gcCafe High Protein Granola
1 ½ cup Rolled Oats
½ cup Coconut (unsweetened large flakes)
½ cup Slivered Almonds (raw)
½ cup Pecans, roughly chopped (raw)
¼ tsp Kosher salt
¼ cup dried fruit, roughly chopped
3 Tbsp Coconut oil
1/3 cup Maple Syrup
1 tsp Vanilla Extract
Preheat oven to 325 degrees F and line a baking tray with parchment paper
Stir dry ingredients together in a large bowl to combine.
Warm coconut oil and maple syrup together in the microwave or over the stove in a saucepan, stirring until the two are combined. Add vanilla.
Pour the coconut oil & maple syrup over the dry ingredients and stir until everything is well coated. Spread evenly on your baking sheet and bake for 20-25 minutes until golden brown (don’t be afraid of colour!)
Sprinkle chopped up dried fruit over the granola in the pan while it cools.
(For chunky granola, don’t stir during the baking process or after it comes out of the oven) Let cool completely before breaking into clumps.
Store in a sealed bag or container at room temperature for 2 weeks, or in the freezer for 1 month.
